What You’ll Need…

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup heavy cream
  • 1 large egg
  • 1/4 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar (for cream cheese mixture)
  • 1/4 teaspoon vanilla extract (for cream cheese mixture)
  • 1 cup sliced strawberries
  • 1/4 cup Safe+Fair Remy Grahams, crushed

What You’ll Do…

  1. Prepare the batter: In a large bowl, whisk together the flour, sugar, cornstarch, baking powder, and salt. In a separate bowl, whisk together the milk, heavy cream, egg, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  2. Make the cream cheese filling: In a medium bowl, beat the cream cheese and sugar together until smooth. Beat in the vanilla extract.
  3. Assemble the pancakes: Heat a nonstick skillet over medium heat. Grease lightly with butter or cooking spray. Pour 1/4 cup of batter onto the skillet and top with 1 tablespoon of cream cheese filling and a few slices of strawberries. Cook for 2-3 minutes, or until bubbles form on the surface. Flip and cook for 1-2 more minutes, or until golden brown.
  4. Serve: Top the pancakes with additional cream cheese filling, strawberries, and crushed Remy Grahams. Serve immediately.

Tips:

  • For extra fluffy pancakes, let the batter rest for 30 minutes before cooking.
  • To make the pancakes ahead of time, cook them and then reheat them in a toaster oven or oven.
  • For a fun twist, add a scoop of vanilla ice cream to the pancakes.
