What You’ll Need…
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/4 cup heavy cream
- 1 large egg
- 1/4 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 1/4 cup granulated sugar (for cream cheese mixture)
- 1/4 teaspoon vanilla extract (for cream cheese mixture)
- 1 cup sliced strawberries
- 1/4 cup Safe+Fair Remy Grahams, crushed
What You’ll Do…
- Prepare the batter: In a large bowl, whisk together the flour, sugar, cornstarch, baking powder, and salt. In a separate bowl, whisk together the milk, heavy cream, egg, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Make the cream cheese filling: In a medium bowl, beat the cream cheese and sugar together until smooth. Beat in the vanilla extract.
- Assemble the pancakes: Heat a nonstick skillet over medium heat. Grease lightly with butter or cooking spray. Pour 1/4 cup of batter onto the skillet and top with 1 tablespoon of cream cheese filling and a few slices of strawberries. Cook for 2-3 minutes, or until bubbles form on the surface. Flip and cook for 1-2 more minutes, or until golden brown.
- Serve: Top the pancakes with additional cream cheese filling, strawberries, and crushed Remy Grahams. Serve immediately.
Tips:
- For extra fluffy pancakes, let the batter rest for 30 minutes before cooking.
- To make the pancakes ahead of time, cook them and then reheat them in a toaster oven or oven.
- For a fun twist, add a scoop of vanilla ice cream to the pancakes.
