- 4 cups finely shredded unsweetened coconut
- 1 cup raw sunflower seeds
- 1-1/2 tablespoons coconut oil
- 1/4 heaping teaspoon salt
- 1 cup pitted dates
What You’ll Do…
- Add coconut sugar (if using) to the container of a high-powered blender. Blend for 10-15 seconds until it becomes powdery. Remove and set aside.
- In a large skillet, toast the sunflower seeds over medium heat. Stir constantly until the majority of the seeds are golden in color. Transfer to the blender container.
- In the same skillet, warm the coconut flakes over medium heat until heated through and some shreds are golden. Remove from heat and set aside.
- In the blender, blend the toasted sunflower seeds on low until a fine powder forms.
- Add the coconut oil to the sunflower seed powder and blend again, increasing to medium speed. Pause to scrape down the sides as needed.
- Blitz on high for 10 seconds and stop. Add 1 cup of the toasted coconut and blend at medium speed for 20-30 seconds. Increase to high for another 10 seconds, pausing to scrape the sides as needed. The mixture should start to form and liquefy.
- Continue adding the remaining coconut, 1 cup at a time, blending as you go until all coconut is incorporated and the mixture is runny.
- Once the mixture is smooth and creamy, add the pitted dates and salt. Blend on high for another 60-90 seconds to achieve your desired smoothness.
- The mixture will be hot and runny. Pour it into jar(s) and cover. Let it cool at room temperature until it firms up, which can take 8-24 hours depending on your kitchen temperature. Store at room temperature for up to a week or in the fridge for up to a month.
